Inspector's notes

Observed cooked sausage patties, cooked egg patties, and sliced ham in the reach-in bagel cooler with no date marks. According to person in charge, all items had been opened/cooked 1-3 days prior. All open, ready-to-eat, TCS food must be date marked within 24 hours of opening or cooking. Items must be date marked for 7 days, with the day of opening or cooking being day 1. All items were date marked at time of inspection. Corrective Action: Corrected at time of inspection.
