When asked how long the food items had been sitting there, the person in charge stated they had been there for 10 minutes. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Person in charge reheated food items to 165*F and hot held at 135*F.
