Observed a container of raw chicken stored over containers of raw ground beef and raw fish stored in the bottom of the prep table unit. Informed PIC that raw animal proteins must be stored according to final cooking temperature and not above any ready-to-eat foods. PIC properly stored all raw animal proteins at time of inspection. Provided separation guidance document via email. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. Observed the wastewater dump line of the mobile unit open and dumping wastewater out onto the asphalt beside the truck. Informed PIC that wastewater needs to be contained on the unit and dumped at the commissary only. PIC stated that the handle for the valve to open and close the pipe broke. PIC was able to close the pipe at time of inspection. Informed PIC that the pipe needs to be closed when they are open and operating. Suggested PIC have the valve handle repaired as soon as possible to increase ease of use. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed multiple containers of mayo-based sauces and sliced tomatoes at 50*F at the time of inspection. Operator stated that the sauces were entered into the fridge at 11am, and taken in and out repeatedly due to sales rushes. Operator was informed that adding ice beneath the sauces and pans of tomatoes can help keep the items at or below 41*F when the fridge lid is open during rushes. Ice was added to the fridge and sauces and tomatoes were returned to 41*F. Corrective Action: Corrected at the time of inspection.
