Inspector's notes

Unit did not have adequate facilities for the sanitization of food contact surfaces at time of inspection. No approved sanitizers or disinfectants were available on unit. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC was able to retrieve additional sanitizer for truck from neighboring vendor at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked rice (55°F), cooked pork (56°F), shredded cheese (55°F, 57°F, 56°F), and chopped cabbage slaw (62°F) in reach in refrigerator at time of inspection reporting above 41°F. PIC could not confirm how long the food had been out of temperature. Fridge was reporting at 62°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked beans (77°F), cooked pork (79°F), and shredded cheese (80°F) out on counter in ice bath reporting above 41°F. Operator confirmed they had been out of temperature for roughly 2 hours at time of inspection and were being swapped out before the 4 hour mark. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked meat sitting on the countertop in a clear container with an internal temperature of 99 degrees F. Per the operator, the meal was cooked two hours prior to this inspection and placed on the counter for cooling. Discussed with operator that no cooling is allow on the unit, and all food preparation shall be simplified to reduce excessive steps where food may become contaminated. TCS foods improperly cooled were reheated to 165°F to restart cooling process using approved cooling procedures. Corrective Action: Correct at once.
