Inspector's notes

Observed foods items out of temperature in fridge closest to fryer, including shredded cheese at 51°F, sliced ham at 46°F, and lettuce at 63°F. Per PIC food items had been on truck since 9am this morning. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F or placed on ice bath at time of inspection. PIC educated on using time as a control until a solution can be found for maintaining fridge temperature (such as curtains or a barrier to deflect heat from fryer away from fridge) Corrective Action: Corrected at time of inspection.

Observed fridge closest to fryer with an ambient temperature of 59°F. Per PIC, top service cover is often open to access items, especially cheese. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. After moving some items to other fridge and placing other items on ice baths or Time as a Control, fridge quickly cooled to 45°F, indicating a trend toward compliance. PIC educated on using Time as a Control procedure for cheeses and to keep them outside fridge to avoid temperature increase. PIC also educated on option to add curtain/barrier between fryer and fridge. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed monterey cheese at 60° F and cheddar cheese at 57° F in a fridge with an ambient temperature of 65° F with no thermometer inside. Other fridge had an ambient temperature of 43.8 F but raw beef read 50° F and raw pork at 56° F and were in fridge for 6 hours according to PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC was informed that foods improperly held must be immediately discarded, fridge with ambient temperature to be inspected for mechanical problems or blocked vents/fans, and to only use functioning fridge until equipment has been restored to proper working order. Corrective Action: Corrected at time of inspection, food improperly held was voluntarily discarded at time of inspection.
