Observed raw chorizo, raw beef, French fries, and shredded cheese at 51-63 degreed in the main refrigerator cold holding. Observed slices tomatoes, shredded cheese, hot dogs, raw beef, chicken nuggets, deli ham and raw bacon cold holding at 44-66 degreed in prep top refrigerator. Per PIC all food was placed in the refrigerator over 2 hour prior to inspection. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 9e - MF Type III-All cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage shall be conducted inside the permitted vehicle. Addl Notes: Observed operator serving agues frescas from folding table outside of mobile food establishment. Informed PIC, all processing and assembly of food or beverage shall be conducted from inside the permitted unit. Corrective Action: Correct at once. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: PIC provided commissary agreement from 2024 at time of inspection. Informed PIC we need an updated commissary agreement for 2026. Corrective Action: Correct prior to re-inspection.

Observed no approved hand drying provisions when using the handwash sink. Person in charge (PIC) offered reusable cloths to dry hands. Explained to PIC that reusable cloths are not an approved hand drying provision. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. PIC obtained and provided hand drying provision for handwash sink at time of inspection.
