Observed establishment to have no means of sanitizing dishes. Person in charge (PIC) stated bleach is used for sanitization with a shipment being delivered tomorrow. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC obtained bleach at time of inspection from nearby establishment. Corrective Action: Corrected at time of inspection.

Establishment was observed to use quaternary ammonia as sanitizer for three comp sink as well as service area countertops. No test strips were available at time of inspection. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Corrective Action: Correct prior to re-inspection.
