Inspector's notes
Observed shredded cheese with an internal temperature of 58*F and hot dogs with an internal temperature of 57*F inside of the ice chest cooler. Per person in charge the items were placed into the ice chest a few minutes prior to inspection. Instructed person in charge to fully submerge the food products in ice and add more ice to ensure temperature is maintained at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
