Inspector's notes

At time of inspection, observed the mobile unit connected to a fresh water hose line to the pinata store next to the mobile food unit. Discussed with person in charge that fresh water shall be obtained from an approved commissary kitchen. Person in charge disconnected the fresh water line during inspection. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 6b, 8c, 9b, 10c, 11b - All time/temperature control for safety foods shall be prepared on the same day of sale or service. Time/temperature control for safety foods shall not be held over from a previous day's operation unless otherwise approved by the Department. Addl Notes: Observed the following items being carried over in the reach in unit at time of inspection: chicken, pork, cut cabbage, pork egg rolls, shrimp and beef. Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Food items were embargoed. Corrective Action: Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Person in charge could not provide a commissary visit log at time of inspection. Advised person in charge a commissary visit log shall be recorded, kept on the Mobile Food Trailer, and made available upon request. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Per person in charge the mobile food unit moves once a year to the commissary kitchen. Per person in charge fresh water is supplied from the pinata store next to the location of operation and grey water is collected in buckets then taken back to the commissary for disposal. Discussed with person in charge that the mobile food unit shall be moved daily to the commissary for fresh water supply and grey water disposal. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed several cooked TCS food such as beans and chicken with internal temperature between 57-61 degrees F. during the inspection, while the unit ambient temperature was at 41 degrees F. Per operator, items were placed in the unit 2 hours prior to this inspection. Discussed with the person in charge that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Operator corrected by using time as control during inspection. Corrective Action: Corrected at time of inspection.
