-- Pico de gallo, cut tomatoes, cooked chicken, shredded Monterey jack in reach-in refrigerator with internal temperatures of 52°F. At the time of inspection, the items were placed in a deep cooler to rapidly cool to 41°F. The ambient temperature of the reach-in refrigerator initially observed to be around 53°F, but began decreasing during the inspection. The establishment has sufficient refrigeration space to safely remain open. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed portioned raw beef packages holding in bottom shelf of fridge holding at 47-49 degrees Fahrenheit. PIC confirmed they had been placed there shortly after purchase around 10am. All other items in fridge were holding properly. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. It was determined that beef packages likely insulated each other after being placed in unit, preventing proper holding. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
