Observed shrimp and ceviche in small prep cooler at 45*F. As per the person in charge the product was out to fill containers at prep cooler. Advised staff to cool back to 41*F within 2 hours of prepping or portioning. Items were placed in colder cold hold unit to return to 41*F. Corrective Action: Corrected at time of inspection.

Observed employee using dry wiping cloth on hands and prep table being used to prepare raw seafoods dishes, and keeping cloth on cutting board during food prep. Cloth was confirmed to be used throughout shift and was not being stored appropriately in sanitizing solution or being swapped out for new linens as needed. Recommended employees swap out linens every 4 hours and place soiled linens in a designated laundry area for washing. Soiled linens were swapped out for clean linens at time of inspection. Corrective Action: Corrected at time of inspection.
