Observed no sanitizer on unit at time of inspection. PIC explained they had just ran out. Explained all food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC was able to send employee to commissary to retrieve bleach. Corrective Action: Corrected at time of inspection.

Observed open service windows with no screens installed and main door to the unit propped open. Explained to PIC all outer opening must be protected from the outside. PIC was able to order 2 screens for the service windows and a cover for the main door. Corrective Action: Correct prior to next routine inspection.

Observed multiple flat tires on unit and PIC was not able to provide commissary logs. PIC explained they use buckets to bring gray water to commissary to dump nightly. Explained to PIC logs shall be maintained for a period of 30 days and should be available for review by the Department. Corrective Action: Correct prior to next routine inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Observed raw unshelled shrimp and bacon wrapped hot dogs stored above cut RTE vegetables. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement.
