Inspector's notes

Observed a pot of rice being hot held outside of the MF unit in a small shack with a stand alone grill. Educated PIC that all cooking, processing, preparing, grilling, assembly, storage, and service of any food or beverage must be done inside the MF unit. PIC relocated rice to the inside of the MF unit and placed under hot holding inside the unit. Corrected at time of inspection. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: At time of inspection, PIC was unable to provide commissary agreement or logs. When asked, owner stated they did not have a current commissary agreement. Educated owner that a current commissary agreement is required in order to operate a MF unit. Owner will provide a current commissary agreement prior to re-inspection. Correct prior to re-inspection on 5/8/26.

Inspector's notes

Observed buildup of food debris on reach-in refrigerator door, reach-in freezer door and beverage refrigerator doors. Discussed with PIC that non-food contact surfaces required to be cleaned more frequently to prevent accumulation of organic matter, dirt, dust and food debris.
