On 8/1/26, PIC did not have commissary visit logs on unit at time of inspection. Per MCEHC, Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department going back 30 days. As of 8/10/26, PIC presented the necessary log and dates, but di not have commissary staff signature. PIC must start recording visits and present log prior to re-inspection by 8/10/26. Corrective Action: Correct prior to re-inspection 8/18/26.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. Inspector's notes

Observed hot dogs (56°F ) and milk (64°F ) reporting above 41°F at time of inspection. PIC confirmed that they were placed in the refrigerator from cold holding within the past 3 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed reach in refrigerator by service window reporting at 60°F at time of inspection. After an hour closed unit was reporting at 48°F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below by 8/10/26. Corrective Action: Correct prior to re-inspection.
