Observed no Certified Food Protection Manager card upon request. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a gallon of milk and a half gallon of milk in refrigeration unit both reading 52°F. Per PIC, all items in unit had been placed inside at 7am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC did not have alternative methods on hand for rapid cooling, therefore PIC agreed to create a Time as a Public Health Control (TPHC) measure since event ended at 4 hour mark (11am), a time log was created during the inspection, and was supplemented with additional materials through email for proper TPHC guidance. Corrective Action: Corrected at time of inspection, placed on Time as a Control.

Observed no Commissary Log upon request. PIC also stated that ware washing was being done as needed in hand sink. Commissary Logs are required to be filled out and kept with operator during all times of operation to provide documentation that fresh water is properly obtained and waste water is properly disposed. Ware washing must only take place at the commissary or with a 3-compartment set up and is not allowed to take place in a hand sink. PIC has been notified that this documentation is to be kept on hand from now on and for ware washing must either set up a 3-compartment area or obtain more utensils to avoid the need for ware washing during operation. Corrective Action: Correct prior to next routine inspection.
