Observed active warewashing at low temperature mechanical warewashing machine dispensing chlorine concentration less than 50ppm. PIC adjusted sanitizer connection at time of inspection and observed chlorine concentration of 50ppm. Food-contact surfaces must be properly sanitized after washing and rinsing. Also observed test strips kept away from warewashing area, informed PIC to ensure test strips are readily accessible by staff so they can test sanitizer concentration regularly. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. --- Observed deep pan of pork curry covered with saran wrap in walk-in at 49'F. PIC stated the food was cooked the day before and was put in the walk-in to be cooled. Walk-in unit had an ambient temperature of 40'F. Food was embargoed as it has been cooling for longer than 6 hours. TCS food items must be cooled from 135'F to 70'F in the first two hours and 70'F to 41'F in the four hours that follow for a total of 6 hours. PIC discarded food item at time of inspection. Discussed using uncovered shallow metal pans for better air flow in order to cool food down within the time parameters. Correct By: Corrected At Time Of Inspection
