Inspector's notes
Observed mechanical ware washing machines in active use. The right machine measured at 0 ppm for chlorine and the left machine measured at about 25ppm of chlorine. Informed PIC that proper sanitization with chlorine needs to be measured between 50-100ppm. Instructed PIC to prime and run the machines again. Upon measuring, the right machine was dispensing 100ppm and the left machine was dispensing 50ppm. Instructed PIC to re-sanitize all food contact surfaces that when through the dish machines prior. All food contact surfaces were properly sanitized at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. Observed roasted tomatoes and mushrooms measured 76'F (prepped at 10am per cook) in standing reach-in unit located opposite of salad station. Roasted tomatoes and mushrooms were prepped longer than 2 hours prior and failed to reach 70'F within the first two hours. Observed deep containers of cooked pasta (made at 5am per cook), measured 46'F in standing reach-in unit located directly opposite of pizza oven. Pasta items were prepped longer than 6 hours and failed to cool properly. All TCS foods improperly cooled were discarded by PIC at time of inspection. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed multiple TCS food items (cooked asparagus, cooked mushrooms, cooked potatoes, etc. see embargo list) measured 46-52'F in reach-in unit located directly opposite of salad station. Ambient temperature of unit observed at 49.7'F. PIC could not verify if unit had been out of temperature for less than 4 hours. All TCS food items (see embargo list) that have been out of temperature for longer than 4 hours, confirmed by PIC, were voluntarily discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC put a work order in for refrigeration unit in question at time of inspection. Establishment observed equipped with more than adequate coldholding capacities. Unit in question was emptied of TCS food items at time of inspection. PIC agreed to not use unit until it has been fixed. 2ND CONSECUTIVE VIOLATION. Food items observed placed atop a lid above fill line, not in direct contact with any air circulation. PIC stated food items were stocked at opening less than 4 hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed cooked artichokes datemarked (11/01) in reach-in unit located in prep area. Employee stated that artichokes were made the day of inspection (10/31) but were datemarked (11/01) since the item was to be used the next day. Reviewed proper datemarking with employee in question to ensure RTE food items are datemarked with the day of prep/cooked and not day of planned usage. Employee datemarked item 10/31 at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
