Predefined Comment: No County legal action will result from this inspection.Reviewed with chef that home style refrigerators shall be replaced with commercial grade refrigerators when its time to replace. Discussed possible need to apply for plan review remodel on permit center depending on plans new equipment (remodel permit can be applied for on permit center). Discussed freezer door in dry storage room being in good repair. Discussed solutions for cold holding being getting a prep table, having food items on ice, or using time as a control.

Observed chef take bread out of toaster and put on plate with bare hands. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. RTE food that was contacted by bare hands was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed TCS honeydew (56*F), cheddar cheese, cut spinach, and cut tomatoes on the counter at room temperature. Chef stated foods were prepped at 6:30am and out of the fridge since with temperature of honeydew taken at 9am. Unable to get temperature of cheese, spinach, and tomatoes before discarded. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed missing floor tile by handwash sink in kitchen and by dish wash machine. Cove missing under dishwash machine and back door. Wall under dish washing area observed to be in disrepair with holes and cracks. Broken ceiling tile above sink of coffee station of multipurpose room. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed dishwash machine to measure 0ppm of chlorine sanitizer. Establishment uses dishwash machine as primary way to wash and sanitize dishes. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Three compartment sink was set up to sanitize dishes until machine is repaired. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 6/17/25.
