Inspector's notes

In the kitchen, several cartons of raw eggs had an internal temperature of 58°F-70°F, and shredded lettuce had an internal temperature of 70-80*F. The person in charge (PIC) verified the temperatures. Both items were being held at room temperature for approximately 1.5 hours. The PIC moved items to the refrigerator and left them uncovered to allow for rapid cooling. Please ensure TCS food items are kept at 41*F below.

A covered plastic container of cooked eggs was found in the reach-in refrigerator with an internal temperature of 130°F. The person in charge (PIC) stated the food item was just placed in the unit to cool. The PIC placed the item, loosely covered, in the freezer to cool to 41°F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.

Two containers of cooked pasta were found in the holding table with internal temperatures of 106*F. The person in charge verified the internal temperatures using the establishment's thermometer. The PIC stated the items were put in the hot holding line an hour prior. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.

The food item temperatures were at 45*F at the end of the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
