The sushi rice measured at 90 degrees F after 2 hours in its container in the kitchen. The time-as-a-control log had gotten wet and had not been filled out in 7 days. Also, there was no written policy concerning time-as-a-control. The inspector gave them a copy of a written policy to use until they produce their own written policy if they need to modify it. The sushi rice's time-of day was written on a new sheet. The written policy must be followed. Corrective Action: Corrected at time of inspection.

Observed cooked sliced onions and cooked diced mushroom in the cooling process measuring at 70*F to 74*F, and crab meat measuring 44*F. Containers were dated 2/22 and covered in aluminum foil. Crab meat was covered with plastic lid. Per manager, items were cooked/ prepped right before establishment opened for the day (less than 2 hours prior). Discussed with person in charge that items should be cooled while uncovered to maximize cold air flow, and once cold holding temperature of 41*F has been reached, items can be covered. Manager uncovered containers to continue cooling process. Correct By: Corrected At Time Of Inspection
