Cooked chicken, sliced tomatoes, shredded cheese, and chopped lettuce in large reach-in cooler near office measured 54-60 degrees F internally. Ambient temperature of unit measured 50 degrees F with min/max thermometer. All time/temperature controlled for safety (TCS) food items had only been stored here for less than an hour and was moved to walk-in at time.
