Observed an in-use warewashing machine with <50ppm of chlorine registered on provided chlorine test strips. Attempted to re-prime sanitizer in machine failed to elicit a response from the test strips. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.

Inspector's notes

Observed TCS food being held in a walk-in refrigeration unit with an internal temperature of 45*F. Internal temperature registered with an internal probe thermometer. Ambient air of unit registered 45*F with a min/max thermometer. Per PIC all TCS food items have been in unit for greater than 4hrs prior to time of inspection. TCS food items included; whole/shredded cheeses, dairy, ribs, pre-made lasagnas, cut leafy greens, and cream sauces. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to not place any TCS food in unit until repaired to hold 41*F or less. Corrected at time of inspection.

Observed TCS food being held in a walk-in refrigeration unit with an ambient temperature of 45*F. Internal temperature of TCS food items registered 45*F with an internal probe thermometer. Per PIC all food items have been inside the unit for greater than 4hrs prior to time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to re-inspection on 7/17/25. PIC agreed to modify menu/not prepare large quantities that need to be cooled. Facility also had alternative cold holding equipment to temporarily continue operation until unit is repaired within 24 hours.
