Observed an in-use ice machine with black, slimy, organic-like material growing behind the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Observed a broken ice cream machine in the drive through with a smell coming from the machine. PIC stated the machine broke a year ago when in use and was unable to be properly cleaned. PIC stated the owner had a company visit to attempt to repair the machine, but was unable to repair it due to the extensive damage to the interior of the machine. PIC stated the owner has not made an attempt to remove or repair the machine in several months. Please remove the broken equipment, to prevent pest harborage or attraction, prior to next routine inspection. Correct prior to next routine inspection.

Observed cut tomatoes being held under time as a control with a starting temperature above 41*F. Per PIC all tomatoes were placed under time as a control at 10am, at time of inspection (10:10am) tomatoes were at 61*F. Internal temperatures registered with an internal probe thermometer. PIC confirmed tomatoes were cut day of at 8am and placed in walk-in unit for cooling. Cut tomatoes marked as cut on day of inspection in walk-in unit registered an internal temperature of 45*F. Per PIC they did not temp tomatoes before placing items under time as control. Educated PIC that any food being held under time as control must start below 41*F for cold foods or above 135*F for hot foods. PIC discarded tomatoes as per company policy. Corrected at time of inspection.
