Spoke with PIC and drinks were relocated to the employee items shelf. Ensure drinks are fitted with a lid and straw and are stored in a designated location away from open food. PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed dishes being sanitized in the three compartment sink with a concentration of 0ppm of QUAT sanitizer. Spoke with PIC and the sink was drained. Sanitizer bucket was filled with sanitizer solution and tested at 150ppm-200ppm. PIC directed associate to refill the sink and re-sanitizer dishes. Ensure the QUAT concentration is between 150ppm- 300ppm for active sanitizing of dishes. Correct By: Corrected At Time Of Inspection
