Observed raw beef stored above bread and cooked chicken sitting on top of raw chicken in the walk-in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Please ensure areas are cleaned at a frequency to prevent this accumulation. Corrective Action: Correct prior to next routine inspection. Food must be stored 6 inches above the ground and away from water and moisture. Employee moved boxes onto a milk crate at time of inspection 6 inches above the ground at time of inspection. Suggested PIC getting a riser at least 6inches above the ground for the kitchen walk-in if they intend to store food product boxes this way. Correct By: Corrected At Time Of Inspection
