Chicken sandwich patties-84F cooling in the reach in cooler in the cookline area. PIC stated that the chicken was blanched (cooked) about 3 to 4 hours prior. PIC discarded the chicken-see embargo form. . Ensure that PHF/TCS foods are cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown that resulted in the violation. Corrective Action: Corrected at time of inspection.
