#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed multiple containers of dairy milk measured 44-48'F in milk cooler located in gym area. PIC stated milk cooler is left open during lunch service hours for a total of 2 hours. Milk containers are then returned to refrigeration to be cooled down to 41'F at end of lunch hours, per PIC. Food items have not been out of temperature for longer than 4 hours. PIC provided temperature log with unit measured at 36'F today. Ambient temperature of unit when closed measured 38.8'F. Ambient temperature of unit when fully opened measured 44.4'F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Suggested PIC to either have items time-controlled or to have milk cooler closed during service hours. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

No TCS foods were observed to have internal temperatures of above 41*F but advised person in charge to store all TCS food items in the milk cooler or freezer until walk in cooler is fixed. Person in charge sates they will have a technician come to repair the unit tomorrow morning. Discussed the importance of having all cold holding units being able to keep an ambient temperature of 41*F or below to prevent bacterial growth of TCS foods. Please do not store any TCS foods in unit until it is working properly. Reinspection will be conducted within 24 hours. Correct By: Correct Prior To Reinspection
