Inspector's notes

In end of pizza prep cooler, observed pizza sauce/55F. In the end of another prep cooler/43F, observed cooked meatballs/47F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Both units have doors that do not close tightly, and may be allowing cold air to escape. Per PIC, the foods were within safe time parameters, and the sauce was placed in an ice bath and the meatballs were relocated to another refrigerator. Corrective Action: Corrected at time of inspection.
