Inspector's notes
In freezer, observed several ROP packages of raw chicken and beef which, per PIC, have been vacuum packaged in the establishment. The packages are being held more than 48 hours. A HACCP plan must be submitted to and approved by MCESD to conducting any specialized processes. PIC began opening the vacuum packages at time of inspection. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
