In customer service area, observed portioned packages of butter and cream cheese/48F-71F being stored in crocks. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Staff discarded the items within four hours (at the completion of breakfast service). Provided Time as a Public Health Control guidance document. Corrective Action: Corrected at time of inspection.

Observed sausage patties in steam table at 115°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC, sausage patties were placed in the steam table within an hour and a half. PIC heated patties back up above 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
