observed in the front retail cooler, packages of shredded chicken and cooked chicken at 50-52 deg f . discussed with deli manager. per manager prepared in the morning. proper cooling for on-site prepared tcs food reviewed. with manager. recommended to place cooling food on open trays in the walk-in cooler speed racks. use of shallow metal pans discussed. also suggested to verify cooled food temp prior to packaging. manager removed all tcs food. removed, and placed back in the walk-in cooler. 41 deg f established. please ensure after the rapid cooling strategies, 41 deg f or colder has been established. Corrective Action: Corrected at time of inspection.

inside the walk-in cooler, observed pans of fried chicken at 43-45 deg f . asked department manager regarding the preparation time date. per manager prepared previous day. manager stated the speed racks may have been left out of walk-in cooler . please ensure all cooling food is kept at 41 deg f . suggested to bring one tray at a time or as needed to minimize cooling food temperatures from being elevated. Corrective Action: Corrected at time of inspection.
