observed in the front meat market, display case cooler, 10-12 trayes of rte/cooked seafood such as seafood salad, cooked shrimp. lobster legs. unable to find a use by date for any of the rte food. discussed with staff in seafood. facility manager on duty provided a coaching /training moment. all use by dates for each rte/food trays were prepared and adhered to food pans. MCESD use by date guidance document reviewed. copies provided. Corrective Action: Corrected at time of inspection.

at the time of inspecting the meat market, the hand-washing basin attached to the utensil washing sanitizer basin, was fully filled with effluents, discolored sewage, and excessive odor was present. showed facility manager. located the staff in charge for the meat department. discussed the proper maintenance requirement for the employee hand washing basins. facility PIC placed a service call. sink was restored to operating, all cleaned and disinfected by staff. Corrective Action: Corrected at time of inspection.

observed at various areas in the meat back prep. area. wall coving junctures cove base peeled off. also, some cracked tiles with holes exposed. showed pic. please repair the cove base, please ensure the penetrations wall to floor are properly sealed. Corrective Action: Correct prior to next routine inspection. 6-201.18 - Core: Walls and Ceilings, Studs, Joists, and Rafters Addl Notes: observed the ceiling panels directly above the 3 compartment basins/ware washing area peeling, paint chipping segments separated. please repair the ceiling to smooth. easily cleanable. showed facility PIC.
