Cut tomatoes, lettuce, ham, spinach, chicken, and chorizo-48-50F in the make line unit in the grill area. PIC stated that all items were placed into the unit about three hours prior and relocated to the walk in cooler. Keep TCS foods in cold holding at 41F or below. *The items in the reach in portion of the cooler were at proper temperature. Corrective Action: Corrected at time of inspection.

Observed inside hot box in middle section uncovered large ray filled with large amount of cooked orange chicken with internal temperature of 126*F-129*F. Notified Person IN Charge (PIC). PIC confirmed internal temperature. Per PIC the food was cooked 30 minutes prior to inspection start time. PIC directed employees to reheat to 165*F to hot hold. Also observed orange chicken on main hot holding unit. Most of cooked orange chicken was 119*F-129*F. Notified PIC, PIC confirmed temperatures and directed employee to reheat to 165*F for hot holding. ======Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Corrective Action: Corrected at time of inspection.

Observed inside upright catering style Traulsen refrigerator with initial ambient of 50.7*F with min/max thermometer. Digital thermometer to left side has 49*F. Inside unit was tcs foods in temperature danger zone (41*F-135*F). Following was inside unit: medium size container of cooked sausage at 44*F; medium size bag of shredded American Cheese at 50*F; opened provolone cheese at 49*F; American cheese slices at 50*F. Temperature log from earlier today has unit at 38*F. Unit was checked various times with min/max with ambient still at 50*F. Notified Person In Charge (PIC). PIC confirmed temperatures and had employees move foods to main walk in unit to cool to 41*F. Verified after 1 hr. Unit will not be used. =====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
