Notable areas include: 1. All metal wire storage racks throughout the kitchen 2. Inside shelving and fan of the reach-in refrigerator 3. Fiberglass reinforced plastic (FRP) walls throughout the kitchen 4. The A/C vent located above the clean dishware 5. The heat lamp at the serving counter. The establishment shall clean the kitchen at a frequency to prevent the accumulation of dirt, dust, and other debris.
