Inspector's notes
Observed multiple Time/Temperature Control for Safety (TCS) food items located in the walk-in refrigerator registering internal temperatures ranging between 48°-50°F. The food items include deli ham, deli turkey, cooked pasta, and cooked meatballs. Per manager, the food items had been checked and in proper temperature ranges the morning of the inspection. Per manager the kitchen had been preparing a large catering order and had the food items in and out of the refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The manager moved the food items to a reach-in freezer to rapidly cool. Corrective Action: Corrected at time of inspection.

Observed establishment utilizing vacuum sealing equipment to reduce oxygen package (ROP) deli turkey for their sub sandwiches. Per manager, the staff slice the deli turkey, reduce oxygen package the portions and freeze them for later use. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. The manager opened the ROP packages and transferred the already sliced turkey into ziploc bags. Provided additional information on ROP and variance requirements via email. Corrective Action: Corrected at time of inspection.

Observed rubber gasket on the door of the walk-in cooler degraded and in poor repair. The establishment shall maintain the doors and gaskets of the refrigeration units in good repair to ensure proper functionality of refrigeration equipment.
