Observed half and half milk, low fat milk, butter, and chocolate milk in the mini-refrigerator in the server station at 50*F using probe thermometer, verified by person in charge (PIC). Ambient temperature was 59.1*F using min/max thermometer. PIC stated all of the items were placed in the unit approximately two hours prior to inspection from the walk-in and relocated the items back to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

During inspection, a kitchen employee grabbed the tong handles that were stored in contact with raw chicken. The employee proceeded to touch buttons, containers, and other equipment that are used for ready-to-eat foods. The PIC instructed the employee to wash hands at the time of inspection. The tongs were replaced and placed in a clean area away from direct contact with raw chicken.

During inspection, the PIC did not have a means to check the hi-temp dishwasher. The PIC stated the thermometer did not have working batteries. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection.

Observed the 2 hour cooling temperature check on the HACCP cook/chill ROP log for the current day, to be incomplete. Sauces such as the meat sauce, were bagged and placed into the ice bins at 10:30 am. At 2:15 pm, the 2 hour/70F temperature was not taken or recorded. The sauces were all observed to be under 70F during the inspection. The variance requires that critical control points be monitored, verified and corrected when necessary, which must be documented in the logs. Each manager on duty verifies the logs and checks the times/temps of the ROP foods. PIC will continually verify that employees are routinely following the HACCP procedures. Corrective Action: Corrected at time of inspection.

According to PIC, the desserts were placed into the reach-in 2 hours prior to inspection; PIC placed into the walk-in to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Observed several trays of recently cooked and cooling spaghetti and fettuccine in tightly covered sheet pans in the walk-in cooler. According to PIC, the pastas are cooked and cooled to 41F or less in an ice bath prior to wrapping and placing into the walk-in cooler. PIC instructed employee to place the pastas into an ice bath to rapidly cool to 41F or less. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food.
