Upon arrival, the hot holding case was empty. No PIC was present. PIC contacted inspector via telephone and sent pictures to show the work order for the unit had been escalated. Inspector informed PIC that the unit must remain empty until corrected.

Observed corn dogs and pulled pork sandwiches in the hot holding unit on the right, holding 114-126F. The items were prepared at 8am. PIC voluntarily discarded the items. PIC stated the lightbulbs were replaced in the unit recently. The air temperature was observed to be holding 107-123F, captured using inspector's min/max thermometer. The items that are still holding 135F and greater have been moved to a working unit. Please do not use the hot holding case unless the air temperature is of 135F or greater. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff on verification breakdown, which resulted in the violation. Correct By: Correct Prior To Reinspection
