Inspector's notes

Observed several sheet pans of cooked pasta, cooling on sheet pans in the walk-in cooler. The sheet pans observed to have a large amount of cooling pasta, covered with plastic wrap, and stacked on the speed rack without any space in between the pans of cooked pasta. PIC split the cooling pasta between two sheet pans, uncovered, and with a space in between each pan. According to PIC, the establishment's policy is to also use an ice bath to rapidly cool the cooked pasta to 41F or less. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
