Observed raw chicken, pork, beef, tofu and cream cheese/crab puffs in small prep cooler across from wok at 44-45*F. As per the person in charge, items were stocked at lunch into prep refrigeration, and the refrigerator was at 39*F when opening the establishment. Items were moved to walk in cooler to cool back to 41*F. Cold hold of food is to be at 41*F or lower during storage. Advised staff to check temperatures of food throughout the day using a metal stem thermometer to verify cold hold temperatures. Corrective Action: Correct prior to next routine inspection.

Observed sandwich prep cooler across from wok at 47.1*F using max/min thermometer. Digital read out at refrigerator was observed to be at 44.5*F Equipment must be maintained at a temperature that can keep food at 41*F. Food items were moved to walk in cooler to cool back to 41*F. Owner will utilize ice baths to keep food cold until unit is repaired. Owner contacted repair company to fix. Corrective Action: Correct prior to re-inspection. Will return on or before Friday March 27, 2026 to verify equipment is able to maintain food at 41*F.

Inspector's notes

In walk-in cooler a bin of white rice measured an internal temperature of 53'F. Per kitchen staff rice had been cooked the previous day and placed into the cooler overnight to cool. As rice had not cooled within proper time frame it was embargoed. Discussed with kitchen staff more efficient cooling methods to ensure that rice cools properly. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
