Mashed potatoes and macaroni & cheese on steam table holding at 99-145'F, even after stirring the foods. Manager reheated both products up to 165'F. There are gaps on the steam well that are letting out hot air. None of the foods were covered. Discussed using lids and metal pans to hold heat better. Discussed finding a spacer for the steam table to prevent air from escaping. Ensure that food items are holding at 135'F or greater before placing into steam well. The sink appeared to be in working order, but there may be a leak in the area which could explain the water pooling on the floor in the area. No leaks were visible during inspection. PIC stated the chicken was placed in the hot holding trays about 30-40 minutes ago and voluntarily discarded the chicken. The nugget tray was slightly stored outside of the hot holding area of the tray holder, this is where the lowest temperatures were observed but even the nuggets in the hot holding area were still not 135*F or above. The strips tray was found completely in the hot holding area but was mostly around 116*F-126*F. PIC will continue to monitor the unit and ensure it is able to maintain product at 135*F or above, otherwise it will not be able to be used for hot holding until it is repaired/replaced. Please ensure hot held TCS food items are maintained at 135*F or above. Correct By: Corrected At Time Of Inspection
