Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Observed sandwiches in the grab-and-go cooler with internal temperatures between 46-54°F at the time of inspection. The ambient air of this unit was between 37-50°F in different parts of the unit. The Person in Charge (PIC) stated they only checked the temperature of the unit in the area that had an ambient air temperature below 40°F, so they were not aware that the other side was not functioning properly and therefore did not know if the unit had been less than 40°F in the last 4 hours. Because the temperature could not be verified within the last 4 hours, sandwiches were discarded (see embargo form). Discussed how to thoroughly monitor temperature using different thermometer types. Ensure all food being monitored by cold holding has internal temperatures of 41°F or below at all times. Second consecutive violation.
