Observed excessive accumulation of grease along HVAC filters above flat top cook area. Educated PIC that excessive grease accumulation can result in food contamination. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.
