Inspector's notes

Observed an in-use warewashing machine with a chlorine solution of less than 50ppm. PIC attempted to prime chlorine solution but machine would not reach 50-100ppm at time of inspection. Educated PIC that a warewashing machine must be able to properly sanitize food contact surfaces withing 50-100ppm for a chlorine machine. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Instructed PIC to contact maintenance and utilize 3-comp sink, until warewashing machine is repaired. Corrected at time of inspection.

Inspector's notes

Observed TCS foods being held in prep-cooler with an internal temperature of 47-51*F. Internal temperature taken with internal probe thermometer. TCS food items included: sliced tomatoes, cooked chicken, barbecue pork, sliced deli meats, and deli salads. Per PIC all TCS food has been in unit since the day before. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Arrived on site to conduct routine inspection and doors were locked/lights off. Per google and sign on the door, the establishment is open at 8am today. Spoke with guard at entrance and they said that the establishment has not opened yet due to hiring new staff members. Inspector will check back in a few weeks to see if the establishment is open and operating.No County legal action will result from this inspection.
