#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed pre-made salads, pre-made sandwiches with ham, turkey, and cheese, pre-made fruit cups with pineapple, and de-shelled hard boiled eggs in cold-holding display near check-out counter range in temperature between 44*F and 47*F. Unit ambient temperature was at a minimum of 46*F, confirmed via minimum/maximum thermometer. Per PIC and date marks on food items, items were prepared yesterday morning, with some food items prepared this morning approximately 2 hours ago. Food items prepared yesterday were discarded by PIC at time of inspection. Food items prepared today were placed in the blast chiller to rapidly cool to 41*F at time of inspection. PIC removed all TCS items from cold-holding display and placed a work order to repair the unit. PIC stated no TCS foods will be placed in unit until unit is repaired. Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
