Observed several canned goods with deep dents. Embargoed the mix of canned goods and PIC discarded at time of inspection. Discussed with PIC swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. Corrective Action: Corrected at time of inspection. Observed dark black, white fuzzy and green fuzzy organic matter on the surfaces throughout the walk-in, on the center beam, on the walls and on the fans themselves. Also observed meat hooks with the same organic matter in the walkin. Discussed with PIC to remove the meat hooks from the facility and physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed multiple gallons of milk, yogurt, cream cheese, cottage cheese, whipped cream, and sour cream in dairy cooler with temperatures between 45 to 46*F at time of inspection. Observed ambient temperature of dairy cooler at 50*F with a min/max thermometer at time of inspection. Per person in charge (PIC), all item in the dairy cooler were from the day prior to inspection and were voluntarily discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Establishment has multiple other working coolers & freezers throughout that are able to maintain TCS food items at 41*F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
