Observed large plastic tub of red salsa (48-50'F) and deep cambro of red rice (47-49'F) both prepared yesterday, more than 6hours prior to inspection. Discussed proper cooling parameters with PIC. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Per cook, all items were placed in the prep table less than 2 hours prior to inspection and were relocated to the walk-in cooler to rapid cool at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
