The prep table is designed for cold holding and not adequate for cooling food below 41*F. 2) Ice buckets shall be stored upside it between use. 3) Date marking shall be updated with each new batch. TCS foods shall be only kept for 7 days or less. 4) Reviewed requirement of proper sanitizing levels for chlorine sanitizer at 50ppm to 100ppm.
Inspector's notes
Observed a scoop with a handle below the surface of the dry ingredient that the scoop was stored in. Also observed a different dry ingredient that has a bowl for a scoop. Discussed with PIC In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection.

Person in charge (PIC) replaced sanitizer bucket, primed dishwasher, and ran the machine additional times; no chlorine was observed from any of the runs. Establishment instructed not to use dish washer until it has a measure chlorine concentration of 50-100 ppm. Establishment agreed to use 3-compartment sink in meantime.
