Observed pink, brown and black organic matter on the ceiling and the shoot of the ice machine. Discussed with person in charge (PIC) all food-contact surfaces must be cleaned to sight and touch and shall be cleaned frequently enough to prevent buildup. PIC shut down the ice machine and started to clean at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed with PIC about ROP-ing and holding food longer than 48 hours is a specialized process and requires a variance. Establishment does not have an approved variance for this process.
