Observed in walk-in cooler green chile pork being cooled in a 5-gallon bucket with the lid on; pork measured 135*F internally and per cook had been placed in walk-in 1 hour prior. Had cook transfer pork into 2 metal bowls less than 4 inches deep and place back into walk-in uncovered to rapidly cool. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed in the reach-in cooler in the kitchen: raw beef patties at 50°F, raw chicken at 48°F, cooked pork at 47°F, cooked turkey at 48°F and cooked chorizo at 48°F. Per PIC, all items had been in the unit for less than 4 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed the reach-in cooler in the kitchen to have an ambient temperature of 53°F as measured on a calibrated min-max thermometer. The unit was holding several TCS foods, which were moved to a functioning cold holding unit to cool to 41°F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 08/19/2024.
