Inspector's notes

Observed previously canned bamboo 46*F, previously canned pineapple 51*F, previously canned baby corn 50*F, cut cabbage 55*F, raw chicken 49*F, raw shrimp 68*F, cut tomato 56*F in the cold table at the time of inspection. Also observed 65*F-68*F rice noodles on the counter by the cold table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, temperatures of the unit were checked less than 4 hours prior to the time of inspection and were 41*F or below. PIC placed containers containing TCS foods in ice and moved other TCS foods improperly cold held to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed using time as a control for rice noodles and PIC time stamped rice noodles at the time of inspection. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC called for repair at the time of inspection. Corrective Action: Correct prior to re-inspection by 7/2/26.

Inspector's notes

Observed in reach-in portion of prep table cold holding unit cooked shredded chicken being cooled in a 6-quart plastic container with the lid on. Per cook, chicken was placed in unit 15 minutes prior - chicken measured 104*F internally with a probe thermometer. Had cook transfer chicken to a shallow metal tray less than 4 inches deep and place tray, loosely covered, in upright cold holding unit. Discussed cooling items in upright cold holding unit, as prep table may not have the capacity to quickly cool items. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
